Would these leather pieces be a suitable material to cut insoles from?
Hey Ian! You certainly can cut from these to make insoles. Typically though, insoles are cut from sole bends that are a bit stiffer that typical veg tan leather like Hermann Oak. We have sole bends on the website here as well, just do a search for them and they'll pop up.

Can you tell me what part of the animal this would be cut from?
Hey Gabriel! These are cut from Hermann Oak veg tan leather sides, from the back down to the belly. Horizontally, the pieces can come from anywhere from the butt to the shoulder.
